We just save up and don't touch that money. Same thing when we did a vacation in London, we realized about what we would need, then added some extra for "just in case" money. It tends to work out well when you plan for something, then the excitement builds. Now if we just go up north to visit some family in the winter time, and go to the Wisp for a day or so thats not a biggie. We save up for more than a weekend trip, otherwise we spend too much.
